Every day, we bake fresh bread with great care and dedication, but not every loaf finds a home straight away. Throwing it out is not an option for us!
Food waste is one of today’s biggest problems. In Switzerland, over 2.8 million tonnes of food, including huge amounts of bread, end up in the bin each year. Bread is a precious product full of craftsmanship, natural ingredients, and time. That is why the Fuchs Bakery has a clear goal: no bread should go to waste!
But what happens to the leftover loaves and rolls at the end of the day? The answer is simple – we give them a second life.

From bread to new product – how we make clever use of our leftovers
Breadcrumbs instead of waste
White bread without fat content is turned into fine breadcrumbs. The loaves are dried, crushed and sieved. The result? A versatile kitchen ingredient. Perfect for coating schnitzels, binding mince or adding a crispy topping to gratins. Our breadcrumbs are a true zero-waste product.
From Rye bread to crispy chips
Our leftover rye bread is transformed into crunchy rye chips – a savoury snack that can be enjoyed on its own or paired with cheese and dips. Our walnut rye bread is sliced thinly and gently roasted in the oven. This simple yet brilliant idea gives our rye bread a second life – and offers a tasty, healthier alternative to conventional snacks.
Bread as animal feed for local farmers
Whatever is no longer suitable for human consumption is repurposed into high-quality feed for animals. Local farmers regularly collect our leftover bread for free and use it as a nutritional supplement for their livestock. The farmers greatly appreciate receiving this natural, nourishing feed for their cows, sheep or chickens. The Eringer cows, for example, are given dried rye bread as a concentrated feed before their traditional fighting season. This completes the circle – from fresh rye bread to energy-rich feed for the mightiest cows in Valais.
